We are proud of our proprietary, long-maturing dough. We produce it with a mix of high-quality, specially chosen flours imported for us from the best Italian millers. We add a small amount of dry yeast so that our dough can slowly rise over 48 hours in a controlled environment.

 

LIGHTER-THAN-AIR-PIZZA?

It takes 48 hours for our dough to rise in a carefully controlled environment, with the temperature changing over time to perfect it. As a result, the fermentation process happens in our kitchen and not in your stomach.

IS OUR PIZZA TOO SMALL?

We make our pizza from a standard portion of flour (250 grams). If it looks like our pizza is too small, this is because we don’t fight with our dough in order to stretch it very thin. This means our dough can rise in peace, creating a crisp crust and preserving its softness inside.

FROM WHAT DO WE MAKE OUR DOUGH?

Water, a pinch of dry yeast, olive oil, our proprietary mix of specially chosen Italian flours, and 48 hours of patience. Natural and artisanal.
